Carrot Cake Granola

- 3 cups rolled oats
- ¼ cup whole wheat flour
- 1 tsp cinnamon
- 1½ cups shredded carrots, about 3 large carrots
- 1 cup shredded coconut, large flake
- ½ cup pecans
- ½ cup maple syrup
- ½ cup canola oil
- 1 tsp vanilla
- ½ cup raisins
- Preheat oven to 300 degrees.
- In a large bowl, combine oats, whole wheat flour, cinnamon, shredded carrots, coconut and pecans.
- In measuring cup, combine maple syrup, canola oil and vanilla.
- Pour into dry mixture and coat completely.
- Spread onto a greased baking sheet.
- Bake 30 minutes.
- After 30 minutes, stir and flip granola. Add raisins.
- Bake an additional 20 minutes.
- Allow to cool completely.
