Fudge Filled Sugar Cookie Sandwiches

Know what tomorrow is? Pancake Tuesday, maybe one of my favorite dinners of the year!

I can’t make pancakes to save my life, but I try every year. Experimenting with different recipes, changing cooking methods, nothing’s worked so far.

Last year I had quite the fiasco. Honestly, I don’t remember the pancakes. I guess they were good (or gasp! maybe we used a mix last year! – don’t tell πŸ˜‰ ) The real story starts after dinner. I came back to the kitchen and the electric griddle’s leg was sizzling away on the front eye of the stove!

Believe me when I say this is not like me at all. Yes, I’m a real klutz, but when it comes to safety (locking the doors, making sure the oven’s off,) I’m really careful – like OCD careful.

So, what happened was, after everything cooked – the pancakes and Field Roast Sausages, I put the griddle on the hot, but off, eye, and didn’t think about it again – until the smell of burning rubber emanated the kitchen!

This year I guess I’ll be pancaking with a three legged griddle. Wish me luck!

Something else I thought I’d never be able to make – sugar cookies! Probably last year, I finally got it.

These specific cookies were created thanks to leftover birthday frosting and a dream to pipe pretty designs on cookies.

Fudge Filled Sugar Cookie Sandwiches

Fudge Filled Sugar Cookie Sandwiches

Ingredients

    Cookies
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup canola oil
  • 1 tsp vanilla extract
  • 1/3 cup cashew milk
  • Frosting:
  • 1/4 cup margarine
  • 1/4 cup cocoa powder
  • 1 cup powdered sugar
  • 1 tbsp cashew milk
  • 1 tsp vanilla extract
  • Icing:
  • 1 cup powdered sugar
  • 1 tbsp boiling water
  • food coloring, optional

Instructions

    Cookies:
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In measuring cup or medium bowl, combine flour, baking soda, baking powder and salt. Set aside.
  3. In a large bowl, use a fork to combine sugar, brown sugar, canola oil and vanilla extract. Add cashew milk.
  4. Add dry ingredients to liquid.
  5. Divide dough into 48 equal balls. Roll into balls, flatten with palm of hand.
  6. Bake for 6 minutes. Leave on baking sheet 5 minutes. Then transfer to wire racks to complete cooling.
  7. Frosting:
  8. While cookies are cooling, cream margarine in medium bowl. Add cocoa powder and fully incorporate. Then alternate adding powdered sugar and cashew milk. Once combined, beat until fluffy.
  9. Icing:
  10. Whisk powdered sugar and boiling water. Add food coloring if desired.
  11. Assemble:
  12. Spread frosting between cookies. If desired, use a piping bag to decorate cookies with icing. Tip: Draw desired shape. Allow to set. Then fill with more icing.

    Oh gosh – I know that feeling. Last week’s casualty was a wooden spoon that I left resting on the side of an enamel pot – now it has a lovely char mark on it. One of those fudge filled cookies would definitely cheer me up! πŸ™‚

    Pancake Tuesday sounds so good! I’m the worst at flipping pancakes, so I buy those silo cone circles where you can just pour the batter right in…such a lifesaver! These cookies look gorgeous, Megan! I love the fudge filling! Yum!

      I’ll have to look into one of those. My trouble is I can’t get the griddle the right temp – it’s either too hot or not hot enough (I even use the dancing water technique!) – that means lots of burned and undercooked pancakes πŸ™ Thank you, Gayle!

    LOVE having breakfast for dinner! I’m not too bad at making pancakes, but I’m THE WORST at making chocolate chip cookies. I don’t know what it is, maybe I’m just being a perfectionist, but I’m never happy with my own! These cookies are ridiculously adorable though and I love that you use cashew milk in the cookies and the frosting, I need to try that! I need these cookies in my life πŸ˜‰

    My kids love pancakes but I’m not a fan of flipping them too. I am a fan of these sugar cookies though. They look amazing! I love the pretty heart and the fudge filling sounds perfect!

    I’m totally like that too, a lil OCD with locking the doors and making sure the stove is off (BF always makes fun of me), but then i’ll go and accidentally melt a rubber spatula into the frying pan, or use wax paper instead of parchment paper and only notice when my oven fills up with smoke! Lol

    Kitchen catastrophes are the worst! One of my more recent blunders happened when I grabbed my sautee pan’s handle with my bare hand after I had it in a hot oven for 20 minutes baking meatballs πŸ™ ouch. On the bright side, these cookies look super cute! I hope you get the hang of pancakes–they’re one of my favorite things to make for weekend breakfasts. I usually wait until the batter has bubbled a bit and then scoop them up and flip them. Practice makes perfect!

But at times it can leave us feeling tired, unworthy, and not β€œas good” as our peers.

Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
