Summer breakfasts just got sweeter. Treat yourself and your loved ones to a Blueberry Scone. These are bursting with berries with a hint of lemon.
Pumpkin picking.
Apple picking.
Strawberry picking.
All things I’m familiar with and grew up doing.
But blueberry picking? – that’s a different story.
I picked my first blueberry this June.
& my opinion on blueberries is forever changed!
Sure, they’re smaller than strawberries and take longer to pick.
But you don’t have to bend all the way to the ground to get them.
and the flavor . . . is outstanding!
Before handpicking blueberries, I probably would’ve ranked blueberries pretty low on the fruit totem pole. But I would’ve been so wrong!

When I made this peach berry cobbler, I wondered if the biscuit topping could be modified for scones – & voila! These scones are even better than bakery scones – in my humble opinion.
The touch of lemon really makes these scones pop and reminds me of my mom’s blueberry muffin recipe.

Ingredients
- 1 & 1/3 cup all purpose flour
- 1/4 cup sugar
- 1.5 tsp baking powder
- 1/2 tsp salt
- 4 tbsp non-dairy butter, cut into chunks
- 1/4 cup blueberry soy yogurt
- 1/4 cup coconut milk, full fat
- 1/2 cup blueberries, if frozen, do not thaw
- Lemon zest, from one lemon
Instructions
- Preheat oven to 400 degrees.
- Combine flour, sugar, baking powder and salt in medium bowl. Add butter and use fingers to incorporate into flour. Once pellets begin to form, add yogurt and milk. Stir until dough forms. Fold in blueberries and lemon zest.
- Press dough into 6 inch round circle.
- Cut dough into 6 equal triangles. Spread triangles apart and place scones equal distance apart on baking sheet.
- Brush tops with coconut milk and sprinkle with coarse sugar.
- Bake for 20-25 minutes or until golden brown.
- Optional: Once cooled, drizzle with melted white chocolate.
