A yummy twist on my favorite granola and cake

Carrot Cake Granola

I love making granola. I make a batch at least once a week. I used to like making different recipes, but usually ended up being disappointed. When you find a good granola recipe, it’s hard to stray from it.

I think everyone has a different favorite granola. The Faux Martha shared her favorite and many other bloggers have, too. I’ve tried many, but none compare to the one I’ve created based off a bag of coconut.

Since last fall, I’ve been dreaming up a Carrot Cake variety. I considered making it like my Holiday Granola, but opted to go with my old standby. With just a couple mix-in swaps, this carrot cake recipe was created.

I simply added some freshly shredded carrot, upped the amount of coconut flakes and kept the number of dried fruit and nuts to a minimum, so as to not overshadow the carrot flavor.

Ingredients
  • 3 cups rolled oats
  • ¼ cup whole wheat flour
  • 1 tsp cinnamon
  • 1½ cups shredded carrots, about 3 large carrots
  • 1 cup shredded coconut, large flake
  • ½ cup pecans
  • ½ cup maple syrup
  • ½ cup canola oil
  • 1 tsp vanilla
  • ½ cup raisins
Instructions
  1. Preheat oven to 300 degrees.
  2. In a large bowl, combine oats, whole wheat flour, cinnamon, shredded carrots, coconut and pecans.
  3. In measuring cup, combine maple syrup, canola oil and vanilla.
  4. Pour into dry mixture and coat completely.
  5. Spread onto a greased baking sheet.
  6. Bake 30 minutes.
  7. After 30 minutes, stir and flip granola. Add raisins.
  8. Bake an additional 20 minutes.
  9. Allow to cool completely.

    Carrot cake granola!! Genius! I love carrot cake, and having this around in the morning would be like a dessert for breakfast! 🙂 I especially love that you’ve only got pecans and raisins in here – true carrot cake flavors! Delicious!!
    I can’t wait to try this! My husband, especially, loves when I make granola – and I think he would love this kind, too! Yum!

Perfect. • It’s something we try so hard to ac Perfect.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.

Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
