Usually, when a recipe calls for sifting, I just say “pffft – I’m not doing it.” I mean – that’s an extra step, something else to clean, and with all that extra work, will it really be worth it?

Well, believe it not, I sifted something for the first time this past week. Yea, it was kinda time consuming, and yes, I had something else to wash, but it felt kinda gratifying.  Like, man, you’re a legit baker. But to be honest, I couldn’t really tell a difference.

Either way, I think I’ll sift as needed from now on. It’s nice to know I have the skill, but I’ll reserve if it for cocoa powder, powdered sugar, and baking soda (I always get small bits of it in my treats without sifting!)

With Holy Week upon us, I imagine there could be lots of sifting opportunities – like Hot Cross Buns, Bunny Bread, Coconut Cake – the list goes on and on (there’s so little time!) One item you should definitely include is this Carrot Cake Loaf! It’s packed with all the traditional flavors like coconut, pineapple, pecans and it’s topped with a sweet orange glaze. This would be the perfect easy treat to include in your Easter festivities.

Carrot Loaf with Orange Pecan Glaze

Ingredients

    Loaf:
  • 2.5 cups all purpose flour
  • 1.5 cups sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 5 oz vanilla soy yogurt
  • 1.33 cups cashew milk
  • 3/4 cup canola oil
  • 2 tsp vanilla extract
  • 1 cup shredded carrot
  • 1 cup shredded coconut, unsweetened
  • 1 8 oz can crushed pineapple, with juice
  • 1 cup mini chocolate chips
  • Glaze:
  • Zest of one orange
  • 1 cup powdered sugar
  • 1.5 tbsp boiling water
  • 1/4 cup chopped pecans

Instructions

    Loaf:
  1. Preheat oven to 350 degrees. Grease two 9 x 5 loaf pans.
  2. In a medium bowl, combine, flour, sugar, baking powder, baking soda and salt.
  3. In a large bowl, combine yogurt, milk, oil and extract. Fold dry into wet and mix until most lumps are eliminated. Fold in carrot, coconut, pineapple and mini chocolate chips. Divide batter evenly among pans.
  4. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in pan for about 30 minutes. Then carefully remove from pan, transfer to a wire rack and allow to cool completely.
  5. Glaze:
  6. Place zest and powdered sugar in small bowl. Whisk in boiling water until smooth. Spread over loaf and sprinkle with chopped pecans.

    I usually never sift ingredients, either! I chalk it up to laziness, haha! 🙂 But it looks like it was worth the extra time. Love this gorgeous treat, Megan!

    And I’m with you — I only sift on a very infrequent as-needed basis! I rarely have the time (or patience) for that extra step!

    I always feel lazy, when it comes to sift something for the recipe. As you said it is actually an extra work or extra step, while making recipe. But at the same time sometime it is mandatory to do that. BTW loved your recipe!!!

    Gorgeous loaf Megan! Chock full of goodness and deliciousness. And that sifting thing, makes us legit! My sifter is old old, and I really need a new one, I think the inside edge of the screen is starting to rust…not good! Sometimes I just stir well with a fork and hope for the best. 🙂

    Carrot cakes are my absolute favorite for spring and this loaf sounds delicious! Especially with that glaze! haha I kinda sorta hate sifting and will skip it unless I think it’s totally necessary!!

    I love everything about this loaf, Megan! I, too, am not a sifter unless it’s cocoa powder. If I haveeeeee to, I will sift flour. But usually, I just don’t love doing it, haha. But congrats on being a LEGIT baker because of it 😉

    I am totally a lazy sifter, I can’t even remember the last time I sifted! I’ll go out of my way to whisk something really well, and then even go through it and squish any lumps out with the back of spoon, instead of actually sifting it which would probably be quicker! lol … Carrot cake looks so good. Especially with coconut and pineapple, yum!!

    Oh how I hate to sift. But….sometimes it’s necessary. Good for you! This bread sounds fabulous. I love all that’s going on inside it. Pineapple, nuts, coconut, carrots..and with a sweet orange glaze? Yum!

Perfect. • It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.

Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
