Add a new dessert to your Easter celebration – Carrot Tarts. These sweet mini pies are bursting with carrot flavor and accented with cardamom and cinnamon.
As you may remember, as a child I hated exercise – & I was far from nimble.
So, Easter egg hunts were not exactly designed for me. However, my church didn’t want any child to be excluded from the fun. They included a prize for the child that found the least eggs – & that was destined to be me!
One year, I set out with my basket, ever so eager to find as many eggs as possible. However, whenever I spotted one, another child would grab it before me 🙁
Don’t fear though – I did get a few! & the coveted prize of least eggs found – a pair of bouncy egg shaped balls in bright spring colors.
These carrot tarts are sure to be a prize and treat for everyone that gets to try them! Excellent egg hunt skills optional 😉
Originally, these were inspired by one of my favorite Indian desserts – Carrot Halwa. Although, the flavor was not the same, these are still pretty delicious – in my humble opinion 🙂

Ingredients
- 1.5 cups all purpose flour
- 1/4 tsp salt
- 1/2 cup powdered sugar
- 3/4 cup margarine, cut into slices
- 2 cups cooked, pureed carrots
- 1 cup + 2 tbsp full fat coconut milk
- 3 tbsp cornstarch
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- pinch of cardamom
Instructions
- Grease 6 mini tart shells, set aside.
- In medium sized bowl, combine flour, salt and powdered sugar. Add margarine. Use your hands to combine all the ingredients. Eventually a dough will form.
- Once it forms, divide dough and press into 6 greased mini tart shells. Use a fork to poke holes into the dough. Freeze tarts for at least 30 minutes or until frozen. Preheat oven to 350 degrees.
- Bake crusts for 10 minutes. Crust may appear bubbly and not set. Transfer to cooling rack. Crust will firm up. Maintain oven temperature while preparing carrot filling.
- In blender, combine all ingredients. Divide among prepared tart pans. Bake for 45 minutes or until filling looks firm and set. Allow to cool completely, then chill in refrigerator. Garnish with pistachios, if desired.
