Chai Spiced Snickerdoodles with Vanilla Frosting

The infamous question – How do you take your coffee? & my answer: black – because that’s what the cool people say, right?

But is that really the truth? How could a baking addict not want at least sugar in her morning cup of joe?

Well, the thing is, I have to be careful about having a lot of sugar in the morning. Too much and I’ll get a sick headache – what an awful way to start the day!

By the afternoon though, I’m ready for my sugar fix! My favorite afternoon pick me up is a Chai Tea Latte. After a few tries, I finally perfected the perfect spicy, sweet tea combo.

I’m obsessed with this drink, so much so I had to find a way to have it for breakfast (in the form of granola!) and now – for snack – in cookie form!

These cookies are your typical snickerdoodle cookie, but updated with spices galore.

Chai Spiced Snickerdoodles with Vanilla Frosting

Ingredients

    Cookies:
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/4 tsp allspice
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • Pinch of black pepper
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup canola oil
  • 1 tsp vanilla extract
  • 1/3 cup cashew milk
  • Topping:
  • 1/3 cup Sugar
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • Frosting:
  • 1/2 cup margarine
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp cashew milk, divided

Instructions

    Cookies:
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In measuring cup or medium bowl, combine flour, baking soda, baking powder, salt and spices. Set aside.
  3. In a large bowl, use a fork to combine sugar, brown sugar, canola oil and vanilla extract. Add cashew milk.
  4. Add dry ingredients to liquid and mix well.
  5. Divide dough into 48 equal balls.
  6. Topping:
  7. In small bowl, combine sugar, cinnamon and cardamom.
  8. Roll balls of dough into sugar mixture, flatten with palm of hand and place on prepared baking sheet.
  9. Bake for 6 minutes. Leave on baking sheet 5 minutes. Then transfer to wire racks to complete cooling.
  10. Frosting:
  11. In large bowl, beat margarine. Add powdered sugar and beat until combined. Add vanilla extract and 1/2 tbsp cashew milk. Beat until fluffy. Add 1/2 tsp cashew milk until desired consistency is reached.
  12. Assembly:
  13. Spread frosting between two cooled cookies.

    I wish I could drink my coffee black, because I know it’s the “healthiest” way, but I always need to add some cream and sugar. And chai lattes are my absolute favorite. Always my go-to drink from Starbucks! So of course I’m loving these snickerdoodles. Such a fun flavor, especially with that frosting!

    I am totally not cool. I take my coffee iced with plenty of stevia and salted caramel creamer. Basically I turn my coffee into a dessert. πŸ˜‰ Snickerdoodles are one of my favorite cookies, so these cookie sammies are screaming my name! Seriously, I want to reach through my screen and eat two dozen of these for breakfast! Love the chia spice you used in these! SO YUM! Cheers, girlie!

    Like Cheyanne, I like my coffee with a packet of stevia, milk, then a dash of whatever flavored syrup or creamer we have on hand. Hot for winter, iced as soon as I don’t have to wear a jacket outside anymore. These snickerdoodles look like heaven! My sister was craving snickerdoodles all last week but we made brownies over the weekend instead. Looks like I found the perfect snickerdoodle treat to satisfy that craving!

    I’m married to a chai addict, so he will LOVE these.
    I can have tons of sugar with few adverse effects (other than my waistline, that is), but starting the morning with that crazy high/crash is probably not the best idea. So I’m with you, Megan!

    It’s crazy how the world works. I’ve been ramping up my Starbuck’s intake the last few months. I used to drink Soy Chia Tea Lattes but have recently been hooked on good old hot coffee instead. Today I was at my local Starbuck’s when someone ordered a Chai Tea and it took me back to the good ole’ days. Since I’m not ready to give up my Grande coffee order just yet these Chai Spiced Snickerdoodles with Vanilla Frosting will help satisfy my craving πŸ™‚

    I really do like my coffee black….unless it’s a latte, or maybe a little cream when I’m at a restaurant. Never sweetened though. I’d rather drink a cup a coffee and have a sweet treat, like these snickerdoodles to dunk into my coffee!

    You are speaking my language with chai spices, Megan! I am such a sucker for cardamom and I love putting it in lots of things! I’m thinking about making some chai spiced banana bread this summer– yum! I love my coffee with a lot of cream and a teeny bit of sugar. Sometimes none! But it HAS to be creamy!

But at times it can leave us feeling tired, unworthy, and not β€œas good” as our peers.

Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.

Here’s to a day of finding bliss in the imperfect and knowing it truly is perfect just as it is.
