Caramelized oats filled with crunchy coconut, nuts and dried fruit

Coconut Almond Butter Granola

Granola. Bread. Cookies. The three recipe formulas I have memorized.

However, with each new variation, I run the risk of losing the recipe if I don’t write it down right away. & most of the time I don’t.

& when I do, it’s on a scrap piece of paper that I carelessly toss in my “cookbook corner.”

Coconut Almond Butter Granola

When a post is approaching and I remember I have to type up the recipe, my heart starts to beat rapidly with the fear that I’ve lost that vital information.

I’ve been trying to do better by typing them up right away, but at the moment I have nearly 20 recipes that haven’t been officially saved!

This granola, however, I made sure I saved right away because I’m pretty sure it’s one of my new favorites. You can never have too many granola favorites can you?

    Oh gosh, I have so many of those scraps myself – spattered with all kinds of things, and in bad handwriting. Thank goodness you kept this delicious one!

    Granola is the best, isn’t it? Perfect for snacks and better for breakfast! I totally understand what your saying about not writing recipes down or having pieces of paper everywhere! I’m trying to keep myself a little more organized and finalize the write up of them quickly before I forget the little details. This recipe looks delish!

    I do that too, but with pics. I’ll have the pics in my inbox unedited, and I’ll have to get to them right away or else lose track of where they are!
    This looks like SUCH a good breakfast!

    I have all of my recipes written down in a tablet, but sometimes I forget to write the amounts correctly, etc. When I really love something I try to type it up in WordPress right away while it’s fresh — I can’t stand when I don’t do that! I’m glad you kept this recipe because this granola looks like a winner! Love the almond butter in here. ๐Ÿ™‚

    hah! I totally get it, Megan. I’m impressed that you have the base recipe memorized! I’ve been making granola for several years now, and I still have to go pull out the recipe each time. Same as our pizza dough. The other day, Laura asked me if I still needed to pull out the recipe for the dough…and I was like, uh, yup. There’s too much other stuff bouncing around up there! Can’t wait to check out this granola version…sounds and looks delicious!

    Guuurl, I feel you! I have a bazillion post it notes and scrap papers lying around my office with recipe ideas and actual snip-its of recipes. It’s a sickness. I am a huge fan of homemade granola and this one looks incredible!! Love the almond butter up in here, and I’m all for adding coconut to all the things!! Cheers, lovely!

    When I like a recipe, I write it into a diary. If I like the recipe after making it myself, I save it on my laptop. Granola is literally my addiction. Iโ€™ve been eating a bunch of store-bought granola! But this sounds too easy to pass up.

    Oooo those almonds sound like the perfect addition to this granola!! Homemade granolas are the BEST. Your version looks so nice, crunchy and delicious! And I am the same when it comes to writing recipes, I have so many of them!!

    Oh my goodness! I’m completely disorganized. I wish I had a cookbook corner, but the best I can do is a notebook. I’m kind of obsessed with these notebooks that I can only find at Walgreens and I keep one in the kitchen most of the time and try to write things down in there as I go. Sometimes I remember. Sometimes not so much. Anyhoo – this granola sounds like something worth writing down and remembering!

But at times it can leave us feeling tired, unworthy, and not โ€œas goodโ€ as our peers.

Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I havenโ€™t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.
