Do you ever get really burned out? So burned out that the things you love to do, now seem more like a chore?

These muffins will be the perfect healthier way to start your day. They are loaded with chocolate, banana and chai flavor!

I experienced this throughout the end of 2018. Baking or relaxing with a good book seemed more bothersome than enjoyable.

It wasn’t until the last weeks of December that I was able to pull myself out of my funk and make it back into the kitchen.

These muffins will be the perfect healthier way to start your day. They are loaded with chocolate, banana and chai flavor!

If you feel the same way about whatever it is you love, take some time just to relax. Do absolutely nothing in your free time if that’s what it takes! Sometimes you just need some time to recharge.

If baking’s something you love, I recommend trying this recipe for Healthier Chocolate Banana Chai Spice Muffins! 😉

These muffins are made with whole wheat flour, sweetened with agave syrup and packed with banana, chai spice AND chocolate flavor. What’s not to love? I opted to bake these in a jumbo muffin tin, but a standard muffin tin would also work!

Healthier Chocolate Banana Chai Spiced Muffins

Ingredients

  • 1 cup white whole wheat flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 cup agave syrup
  • 3/4 cup mashed banana - or 1/2 cup banana, 1/4 cup pumpkin
  • 1/2 cup milk
  • 2 tbsp oil
  • 1 tsp vanilla
  • 1/2 cup diced banana
  • 1/4 cup mini chocolate chips, plus more for topping

Instructions

  1. Preheat oven to 350 degrees. Grease a jumbo (or standard) muffin tin with cooking spray. {See note for cooking time for standard sized muffins!}
  2. In a medium bowl, combine flour, cocoa powder, baking powder, baking soda, salt and spices.
  3. In a large bowl, combine agave syrup, mashed banana, milk, oil and vanilla.
  4. Fold dry ingredients into wet and mix until most lumps are eliminated. Fold in diced banana and mini chocolate chips.
  5. Evenly distribute muffin batter into prepared tin.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow pan to cool on wire rack.

Note: For standard size muffins, bake for 15-18 minutes, or until a toothpick comes out clean.

Perfect. • It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
