Honey Whole Wheat Oatmeal Bread

It’s been a while since I tried making my own yeast bread, so I figured it was high time I try another. This loaf is inspired from this great loaf I found on Girl Versus Dough. Everything about this was perfect – so why try to make another version? Well, why not?

Honey Whole Wheat Oatmeal Bread

The main difference in this loaf is the oatmeal is cooked. This was inspired by one of my favorite Farmgirl Fare recipes, Oatmeal Toasting Bread. The result is a soft bread with a chewy texture.

If you have time to make this bread this weekend, you must. It’s perfect alone or with a slab of Blondie Spread. Mmm!

Ingredients
  • 2 cups boiling water
  • 1 cup rolled oats
  • 2 tbsp canola oil
  • 2 tbsp honey
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 2¼ tsp instant dry yeast
  • 1 tsp salt
Instructions
  1. In a large bowl, combine boiling water, oats, honey and canola oil. Allow to rest for 20 minutes.
  2. In a measuring cup, combine bread flour, whole wheat flour, instant dry yeast and salt.
  3. Slowly add dry ingredients to slightly cooled oat mixture. Once combined, begin kneading. If dough is too sticky, add a little extra bread flour. The dough will remain slightly sticky. Knead for 5 minutes, until dough is smooth.
  4. Allow to rise in oiled bowl covered with a tea towel for one hour.
  5. Once risen, roll dough into a 13 x 9 inch rectangle on a cutting bar. Tightly roll the rectangle into a loaf. Seal the seam and tuck the ends.
  6. Place seam side up in a greased loaf pan. Flip out of pan and place in pan seam side down. If desired, drizzle one teaspoon of oil on loaf and sprinkle extra oats on top of loaf. Allow loaf to rise for one hour.
  7. Preheat oven to 400 degrees. Bake for 20 minutes. Rotate and bake for an additional 10 minutes. Cover with aluminum foil and bake 10 minutes or until internal temperature reaches 200 degrees.
  8. Remove from loaf pan and place on wire rack. Allow to cool completely before slicing.

    Ohhh I love this! I am kind of a scaredy-cat and have yet to try bread! But, I love love love honey wheat bread…I just hate that I can never find honey WHOLE wheat bread.

    I have not had great success with yeast breads, but this looks soooo delicious, I’m willing to give it another try! I love that there is oatmeal in here – I bet the texture is amazing! Pinning – and can’t wait to try! YUMMMM! 🙂

Perfect. • It’s something we try so hard to ac Perfect.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
