There’s big news at the TEB household – we have kittens!

I’m obsessed with cats, so you know I went wild when I heard the news. I actually couldn’t believe it.

See – this female cat started coming by each day at the same time and same place. The first time I saw her I thought she was “in heat,” so I joked that we would be having kittens soon – but I didn’t mean in two days!

It turns out she had the kittens in our backyard. We have owls and foxes that roam the area and our neighbors wanted us to bring the cats in. We happily obliged! Can you believe I’ve never seen a kitten before?!?!

There are five kittens in total. I can’t wait to watch them grow up, but I’m already dreading when it’ll be time for them to find homes. (But I’m sure Winston will be glad when I can devote all my free time to him again 😉 )

On to this granola. Ever since I made the Hummingbird Cupcakes, I’ve been dying to replicate the flavors in other treats. This granola is based off of my basic granola recipe with the addition of mashed banana, banana chips, dried pineapple chunks and pecans. Let’s just say I couldn’t keep my hands off this sweet, spring treat (kinda like how I can’t keep my hands off these kittens 😉 )

Ingredients
  • 3 cups rolled oats
  • ⅓ cup whole wheat flour
  • 1 tsp cinnamon
  • 1 cup pecan halves
  • ½ cup canola oil
  • ½ cup maple syrup
  • 2 mashed overripe bananas
  • 1 tsp vanilla extract
  • ½ cup banana chips, broken in half
  • ½ cup dried pineapple chunks
Instructions
  1. Preheat oven to 300 degrees.
  2. Grease baking sheet with canola oil.
  3. In large bowl, combine rolled oats, whole wheat flour, cinnamon and pecans.
  4. In measuring cup, combine canola oil, maple syrup, mashed banana and vanilla extract.
  5. Pour liquids into dry mixture. Mix to coat.
  6. Spread oats on baking sheet, pressing into a single layer.
  7. Bake for 30 minutes. Flip oats. Add banana chips and dried pineapple chunks. Bake an additional 20 minutes.

    Oh my goodness. Those kittens are so precious. I don’t have a cat of my own, but I love visiting my dad’s house to see their cat. I need to try this hummingbird granola. I really have never seen another recipe like it.

    That’s so exciting that you have kittens, Megan! They’re SO adorable! And this granola sounds amazing! I love making my own flavors and this one looks perfect. I love the dried pineapple in here, too!

    What an awesome name for a granola and even a more awesome creation. I love the ingredients you used and it looks fantastic all put together. I’d love some on my oatmeal or yogurt parfait. Shoot, I’d love it just as it is!

      It is delicious with yogurt, but a little bit dangerous to eat by the handful – I’d eat the whole batch and not even realize it 😉

    oh my gawd, kittens!!!! when I was little, my dad owned a small Asian grocery store and one day a cat had her kittens right outside . . so we kept them for a bit and then, yes, sadly found new homes for them .. so sweet!!! enjoy the time with them!!! and love this . . this is my kind of granola!!! yumm!

    Love love love this granola! Hummingbird is such a fun cake flavor and I love the idea of being to have it for breakfast!!

Perfect. • It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.
•
So I haven’t been taking as many photos.
•
Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
