Have you met the magical date? {No, I don’t mean a romantic evening!}

I’m referring to the fruit that grows on the Date Palm Tree.

It took me over 20 years to meet this sweet treat & I was pretty apprehensive to try it.

My first encounter was when I made Minimalist Baker’s Peanut Butter Cup Energy Bites. & I literally couldn’t believe how amazing they were – especially since such an unattractive dried fruit was the main attraction.

But I still did not consider dates a true dessert treat or something you would become overly excited about – enter Andrew from Season 7 of The Great British Bake Off: (paraphrasing -) My dad used to keep dates in the dashboard! – what?!? who becomes excited over keeping dried dates in the car?! I can totally understand chocolate or something, but dates!?!

Any who, now it’s time to meet your new favorite treat – Key Lime Pie Tarts. These are truly so amazing. It doesn’t hurt they’re healthy and easy, too!

These would make the perfect after school snack or even breakfast! For any age 🙂 They can be made ahead of time and then quickly grab out of the fridge and serve.

Simply whip up the date crust that includes pecans, coconut, and chia seeds, press into tart pans, chill and then add So Delicious Dairy Free® Key Lime Yogurt Alternative.

After school, kids can be tired. This great tart includes healthy ingredients to give kids the extra boost they need to tackle homework.

This treat helps make going back to school a little easier. A quick and healthy treat is just what busy parents and kids need.

Key Lime Pie Tarts

Ingredients

  • 1 cup pecans
  • 1/4 cup coconut
  • pinch of salt
  • 1 cup dates ~ about 18
  • 1/2 tsp of vanilla extract
  • 10 oz So Delicious Dairy Free® Key Lime Yogurt Alternative
  • Lime zest
  • Fresh fruit

Instructions

  1. Line 4 inch tart pans with wax paper.
  2. In food processor, pulse pecans and coconut until ground into small bits. Add a pinch of salt. Then add dates, one at at time. Once combined, add vanilla extract.
  3. Divide among tarts and press into tart pans. Place in freezer for one hour.
  4. Add yogurt alternative. Garnish with zest and fruit. Allow to chill if desired. Store in refrigerator.

Yield: 3 small personal tarts

Perfect. • It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.
•
But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
