Start your day with this Mocha Pumpkin Smoothie. It features layers of mocha oat smoothie and pumpkin oat smoothie – the perfect filling fall breakfast with a caffeine kick!
When you go away to college, you want to be your own person and do your own thing.
Well, that wasn’t my thinking. I wanted to keep everything as much the same as possible.
& that included coffee making.
Remember how my dad roasts coffee?? Well, I wanted to start brewing my own every morning.
That involved getting a huge, loud grinder. So, every morning when my alarm went off at 6, I’d proceed to my small kitchenette and start roaring that thing. I’m sure my neighbors appreciated all the noise.
& to be honest, I didn’t even make the best coffee. A large percentage of the time I had a cup filled with grounds.
These days, I’ve abandoned my coffee making pursuits. Instead, I just use a Keurig for a quick caffeine fix.
It came in handy when making this Layered Mocha Pumpkin Oat Smoothie.
To make your own, start by making your favorite coffee. I made a cup of Dunkin Donuts® Bakery Series® Chocolate Glazed Donut the night before. In the morning, I added Silk® Almond Vanilla Coffee Creamer. This combo is delicious by itself, too. (Shocking words from a girl who usually takes her coffee black 😉 )
These products can be found at your local Kroger or Kroger Banner Store. I shop at Harris Teeter weekly and was pleased to find these products. Although I don’t usually buy coffee and creamer, I can tell I may be tempted to in the future – I sense another obsession brewing 😉
When developing this recipe, I was afraid the mocha layer would taste banana-y and I wasn’t sure how coffee and banana go together. In the end, I was pleasantly surprised by the strong coffee flavor in this layer.
The pumpkin layer features frozen canned and canned pumpkin puree to help get a creamy smoothie. To freeze pumpkin, place dollops in an ice cube tray, then pop out what you need in the morning.
When ready to serve, layer with the thicker smoothie first. My pumpkin layer was slightly thicker, so it went on the bottom, but yours may be different depending on the size of your bananas, etc.
This ended up being a great, fun breakfast. The oats helped me stay full all morning and was a nice change from my normal routine.

Ingredients
- 1/4 cup oats
- 1/2 banana, frozen and sliced
- 140 g pumpkin puree, frozen - tip: use an ice cube tray
- 1/4 cup pumpkin puree
- 1/4 cup Silk® Almond Vanilla Coffee Creamer
- 3/4 cup unsweetened cashew milk or nondairy milk of choice
- 1 tbsp brown sugar, or sweetener of choice, to taste
- 1/4 tsp cinnamon
- 1/4 tsp ginger
- pinch of allspice
- pinch of cloves
- pinch of nutmeg
- 1/4 cup rolled oats
- 2 bananas, frozen and sliced
- 6 oz Dunkin Donuts® Bakery Series® Chocolate Glazed Donut, brewed, chilled
- 3 tbsp Silk® Almond Vanilla Coffee Creamer
- 1 tbsp sugar, or sweetener of choice, to taste
- 1 tbsp cocoa powder
Instructions
- Place oats in blender. Pulse a few times, until oats are broken into small pieces.
- Add bananas, frozen pumpkin puree, pumpkin puree, creamer, brown sugar and spices, in that order, to blender. Blend until smooth and creamy. Transfer to a bowl and place in freezer while preparing mocha layer.
- Place oats in blender. Pulse a few times, until oats are broken into small pieces.
- Add bananas, coffee, creamer, sugar and cocoa powder, in that order, to blender. Blend until smooth and creamy.
- Spoon thicker smoothie into bottom of glass. Top with other smoothie.
Note: Extra smoothies can be frozen. The night before allow smoothie to thaw in refrigerator. Also, extra can be frozen in popsicle molds.

I actually bought a banana bread flavoured coffee the other day for my Nespresso machine. I’m not usually one for flavoured coffees, but wanted to try it and it was actually pretty good! This smoothie looks SO good, Megan!! Love all the flavours in there and the layers looks so pretty! Would love to have this for breakfast right now! I’m all about smoothies these days and just throw whatever fruit I have on hand and some milk in the blender and out the door I go. Can’t wait to try this one 🙂
