Lemon Sandwich Cookies

I’m the quietest chick you’ll ever meet. & believe me when I say, it’s not a bad thing.

I’ve heard my whole life, “you’re so quiet!” Well, so what if I am? I wasn’t blessed with the gene of having something to say or knowing what to say.

Sure, maybe it’s held me back in certain situations, but I’m sure it’s helped me in more ways than I’ll ever know.

Each person is different and you just have to accept that. So, all you quiet people out there, let’s silently unite and eat lots of these cookies πŸ˜‰

These were developed for my mom’s Mother’s Day treat. I didn’t’ want to make cake or cupcakes because we were having a heavy dinner. So, I opted for these Sandwich Cookies and made use of my mom’s strawberry request. I originally thought just lemon, but what fun would that be?

Lemon Sandwich Cookies

Serves: 18
Ingredients
  • ½ cup brown sugar
  • ½ cup canola oil
  • 1 cup sugar
  • ⅓ cup lemon juice
  • 2.5 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • Zest of 2 lemons
  • 1.5 cups powdered sugar
  • ½ cup shortening
  • Juice of one lemon
  • 1 strawberry
Instructions
  1. Preheat oven to 350 degrees. Line baking sheets with Silpat or parchment paper.
  2. In large bowl, combine oil, brown sugar and sugar with fork. Once combined, add in lemon juice.
  3. In measuring cup, combine flour, baking powder, baking soda and salt. Fold into liquid mixture. Once combined, fold in lemon zest.
  4. Form dough into 36 equal balls. Flatten.
  5. Bake for 10 minutes. Allow to cool on baking sheets for 5 minutes.
  6. Prepare frosting. Beat shortening. Add in powdered sugar. Beat until small pellets are formed. Add lemon juice and beat until fluffy. Smash strawberry with fingers and fold into frosting. Spread frosting between two cookies.

    I’m fairly introverted/quiet when I first meet someone, but when I open up…there is no stopping me lol! But I totally agree that every person is unique and that’s what makes the world go round!

    Love the citrus and fruit combo in these cookies! That sweet tart is what I live for.

    I completely agree – everyone is different and that’s a wonderful thing! It wouldn’t be a very fun world if we were all the same!! These cookies …. I’m trying to stick with a cup of tea tonight but you are making me want some dessert!

    Megan, there’s nothing wrong with being quiet. As you read today in my post, it took me years to feel comfortable in my skin so I was also the quiet one. . but now I think I’m a good balance of both .. outgoing and quiet. these lemon sandwich cookies seem perfect for mother’s day and I absolutely love the strawberry-lemon-buttercream frosting!! I love strawberry + lemon together!

    Hello fellow quiet person! I am the same way. I’m more of a listener than a talker and generally very introverted (read: basically shut down in large groups). You are not alone! And there is nothing wrong with being quiet. I like to think it adds a little mystery πŸ™‚

    I am also a pretty quiet person. I just don’t feel like talking when I don’t have anything to say, you know? But some of my best friends just DON’T have an inner monologue. Even when they are studying, they feel the need to talk out loud about what they are doing. I guess we balance each other out, but I cannot imagine living my life like that! But that’s what’s great about us: our differences πŸ™‚
    These cookies sound like summer all wrapped up in a little bite sized form. I love it!

But at times it can leave us feeling tired, unworthy, and not β€œas good” as our peers.

Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
