Banish winter blues with a tropical lime ice cream

So, I’m back from another unintended hiatus. Things have gotten sorta busy for me, but that doesn’t mean I don’t yearn to be in the kitchen concocting new treats and sharing them with you. In honor of my hopefully more consistent return, I am taking you on another trip to the Caribbean. (Especially needed thanks to Phil’s prediction)

Lime Ice Cream

Remember these Lime Chocolate Chunk Cookies? Well, I have the absolute perfect complement today – Lime Ice Cream! The two together – the perfect treat! I had planned on making a blizzard – like this one, but then, spur of the moment, I opted for a simple sandwich. It was a great decision! This cream is even delicious with plain chocolate chip cookies.

Serves: about 10
Ingredients
  • 2 cans coconut milk
  • 1 cup sugar
  • ⅓ cup lime juice
  • Zest of 2 limes
  • 1 tsp vanilla
Instructions
  1. Bring two cans of coconut milk to a boil.
  2. Once boiling, remove pan from heat.
  3. Whisk in sugar, lime juice, zest and vanilla. Make sure everything is fully dissolved.
  4. Allow to chill overnight in refrigerator. Once completely chilled, transfer to loaf pan.
  5. Place lime mixture in freezer. Every 30 minutes use handheld mixture to beat mixture. Continue to do this for three hours.
  6. Ice cream can either be eaten right away or left in freezer to completely harden.
  7. If eating the next day, allow to thaw at least 10 minutes before eating.

    We’re bracing for ANOTHER winter storm tomorrow night, and this recipe right here just helped me remember that summer will eventually return. Ahhhh … so incredibly fresh and light! You totally rock! With only a few ingredients and not a ton of hand-on time … I may love on this until I can wear my flip flops everyday! 🙂

    Ooh I bet this tastes amazing! I love frozen lime-flavored desserts. I’ve never used coconut milk for ice cream before but I think I most definitely should. 🙂

    This sounds so delicious! Lime and lemon are my favourite flavours- just so fresh. The lime alone sounds just amazing- and served with that chocolate cookie- pure bliss! 🙂

Perfect. • It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.
•
So I haven’t been taking as many photos.
•
Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.

Here’s to a day of finding bliss in the imperfect and knowing it truly is perfect just as it is.
