Not kindergarten me, or any of my classmates (that I know of!)

You’d think my feelings on napping would’ve changed throughout the years, but I remain adamant, that napping shouldn’t be allowed.

My beliefs on this subject were firmly planted on a family trip to NYC. We were only there a brief period and on our last full day, I started to feel really sick. We went back to our hotel. & I did the dreaded – I napped!!

I woke up several times, but couldn’t pry myself out of bed. By the time I finally pulled myself out of my groggy state, the entire day was gone!

Now, I understand your body needs time to rest and recover, but NOT when you’re on vacation in NYC!

Since then, I’ve vowed to never nap! I may be wrong on this subject, but there’s just too much to do & it’ll never get done if you’re asleep!

So, to pull yourself out of the afternoon slump, I propose eating a stack of these Matcha Almond Cookie Sandwiches instead! They feature Aiya’s Cooking Grade Matcha that is specially blended for baking and beverages. I really enjoyed baking with this green tea. It comes in a resealable package and helps create delicious cookies. I can’t wait to bake with it again and try it in a Coconut Matcha Latte πŸ™‚

I paired the cookies with a creamy almond frosting. If desired, you can roll the sandwich cookies in sliced almonds for an extra crunch.

Matcha Almond Sandwich Cookies

Yield: 36 Sandwiches

Ingredients

    Cookies:
  • 2 cups all purpose flour
  • 1 tbsp Aiya Cooking Grade Matcha
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup canola oil
  • 1 tsp almond extract
  • 1/3 cup lite coconut milk, or your favorite unsweetened nondairy milk
  • Frosting:
  • 1/2 cup margarine
  • 3 cups powdered sugar
  • 1 tsp almond extract
  • 1 tbsp + 1 tsp unsweetened cashew milk
  • Sliced almonds, optional

Instructions

    Cookies:
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In measuring cup or medium bowl, combine flour, matcha, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, use a fork to combine sugar, brown sugar, canola oil and almond extract. Add lite coconut milk.
  4. Add dry ingredients to liquid and mix well.
  5. Divide dough into 72 equal balls. Roll into balls, flatten with palm of hand.
  6. Bake for 6 minutes. Leave on baking sheet 5 minutes. Then transfer to wire racks to complete cooling.
  7. Frosting:
  8. Beat margarine in medium bowl. Add powdered sugar and beat until small clumps begin to form.
  9. Add almond extract, beat. Add cashew milk in tsp increments, beat until fluffy.
  10. Assembly:
  11. Spread frosting between cookies with a knife or piping bag. Press cookies together so frosting is pushed to edges.
  12. If desired, roll cookies in sliced almonds.

Note: Extra frosting may be stored in refrigerator. Allow to reach room temperature and then spread on cookies or cake.

    Naps are the best, though!! Funny when I know I have to get up, it’s hard, but if it’s the weekend and I know I can sleep in a bit, I’m usually up early. Oh well!!

    These sandwich cookies look super yum! Would love to try that matcha powder and that almond frosting sounds like the perfect match to me πŸ™‚

    I napped when I had to when I was little, but I wasn’t that into it either. And fast forward to my college years when everyone was napping, and I still didn’t do it! Nowadays, I will if time allows, but I need at least a 2-3 hour nap, otherwise I wake up cranky haha. These cookies look SO pretty, Megan! I’ve never tried matcha in baked goods before, so I’m loving this creative twist!

    Sometimes naps just have to happen! I woke-up at like 3am Saturday and knew a nap would just happen later that day…it did…and it was worth it!

    Sorry, but naps are my thing. I mean, I don’t get to take many, but a good 10-20 minute power nap is the best thing ever. You don’t lose much time and you wake up so refreshed!
    These are a good nap substitute, though. I’ll take these anytime. They’re gorgeous!

    The only time I’ve ever napped since I was a kid is when I have the flu and my body kind of makes me. But I hate that feeling of being sick, falling asleep in the middle of the afternoon, and waking up an hour or two later. It’s still light out and I get really confused. I feel like I’ve wasted the day, even though I’m sick. πŸ™‚
    These cookies are downright beautiful. The matcha gives them such a light, beautiful color. They sound delicious!

    I’m kinda with you on the napping – when I need to do it I’m willing, but I always feel like the days been wasted when I wake up, no matter what time it is. It totally throws me off! I’m all about these matcha almond sandwich cookies though…they look so fantastic!

    I’m with you – I’m way too groggy after even the shortest of naps…I actually have more success with gaining extra energy by hopping on the treadmill for 20-30 minutes vs. putting my head down. I’ve always been that way! Now about these cookies – LOVE! Love the color, texture and overall deliciousness! Pinned!!

    Awww, I’m sorry you were sick on vacation! I hope you’ve had a chance to go back.

    When I was a kid, I hated naps. I could never fall asleep, always wanted to be doing something more fun, and inevitably got in trouble because the other kids WERE sleeping.

    I don’t like naps any more that I did back then, but unfortunately, they’ve proved necessary. Sometimes I just need a short nap to push me through the rest of the day. Especially when I was working at a coffee shop and was getting up at 3:45 in the morning. I was useless unless I got my post-work nap.

    These cookies are worth staying awake for. And they have caffeine in them, so….I’m gonna be up anyways. Why aren’t there more sandwich cookies in my life?

    So sorry Megan, but I like naps – or the idea of them though I don’t enjoy them like I’d like to – though I gotta agree with you – no napping allowed when one’s in NYC! I love that city and am all about sugaring and caffeinating up to enjoy it – especially when sugaring up and caffeinating up looks as good as these Matcha Almond Cookie Sandwiches! I adore all things Match and these I could eat by the dozen – ok, so I lied – maybe half dozen! πŸ™‚

    I’m not a napper by any means – when I do I feel groggy and totally off. Matcha is my choice for caffeine and what I reach for during the mid-day slump. These cookies though look so much tastier than a hot beverage though.

    Bahahahaha! Oh my gawd, I CAN NOT nap. Like at all. My husband on the other hand? He is a napping CHAMPION. Seriously, Boy can nap all day, every day if you let him and it drives me NUTS.     So I would have been right there with you on the no-napping train…until Robbie was born. With a baby in the house, you literally have to grab an hour of sleep here and there, or you might just go crazy. But napping while on vacation is the worst, so I can feel ya there!

    These cookies look incredible, and I love that you paired the matcha with an almond frosting. This is one amazing cookie, Megan! (They also kinda remind me of Elphaba from Wicked…haha!)

    OMG i got crazy of matcha. i love everything combine with matcha. can you believe that i asked my friend in Japan to send me 1kg of greentea powder ( matcha) just bacause i want to use matcha made from Japan 100%? xD

But at times it can leave us feeling tired, unworthy, and not β€œas good” as our peers.

Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
