This 6 inch vegan strawberry cake is bursting with fresh strawberry flavor. It features layers of strawberry cake topped with coconut frosting.
Several years ago, my mom and I took a series of Wilton Cake Decorating Classes. This was all before I was seriously addicted to baking. Each week we prepared by baking a cake and bringing it to class.
We were far from the best, sitting next to our perfectionistic classmates, but we had fun. & we acquired a plethora of cake decorating tools. Many that probably won’t be used again (but, hey, maybe we’ll try it again!)
So, I thought Erin of The Speckled Palate‘s Baby Shower would be the perfect opportunity to have a little more cake fun, specifically Mini Strawberry Cake fun (the best way to celebrate a baby girl! 😉 )
The technique for this cake was inspired by Sally’s Homemade Strawberry Cake. Her version and mine feature a strawberry concentrate that brings bright, fresh strawberry flavor to the cake.
I opted to add a little shredded coconut to the frosting, but that’s optional if you’re not a fan! 🙂
Now back to the real reason this cake was made: Erin!

Do you prefer mini cakes or standard sized cakes?
Ingredients
- 2.5 cups all purpose flour
- 1.5 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/2 cup strawberry puree (See Note)
- 1/2 cup vanilla non dairy yogurt
- 1.5 cup unsweetened cashew milk, or nondairy milk of choice
- 1 tbsp apple cider vinegar
- 1 tsp red food coloring
- 2/3 cup canola oil
- 1 tbsp vanilla extract
- 3.5 cups powdered sugar
- 1/2 cup non dairy butter
- 1 tsp vanilla extract
- pinch of salt
- 3 tbsp non dairy milk
Instructions
- Preheat oven to 350 degrees. Grease 3 - 6 inch round pans. Line the bottoms with parchment paper. Grease again.
- In a medium bowl, combine flour, sugar, baking powder, baking soda, salt. Set aside.
- In a large bowl, combine yogurt, cashew milk, oil and vanilla extract. Fold dry ingredients into wet and mix until most lumps are eliminated.
- Spread into prepared pan.
- Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Allow pan to cool on wire rack. (If making cupcakes, bake for 15-18 min.)
- Once cool, turn out of pans.
- Beat non dairy butter. Add powdered sugar, beat. Add vanilla extract, beat. Add milk one tbsp at a time until frosting forms. Beat for several minutes until frosting is fluffy.
- Spread frosting between cake layers. Add a sprinkle of shredded coconut if desired.
- Leftover frosting may be stored in a covered bowl in the refrigerator.
Notes: For strawberry puree - Process one pound fresh strawberries. Once smooth, transfer to small saucepan. Place on medium heat. Once mixture begins splattering, reduce to low. Keep over heat for 30 minutes. At end, strawberries should have thickened and turned a burnt red color. Allow to cool completely.
