Homemade vegan mint oreos with Creme de Menthe frosting
You know, I’m really not as big as an “emotional baker” as I used to be. When I started this blog, I was always freaking out when things didn’t go my way in the kitchen (and otherwise, too.) There’s plenty of evidence of this from my first blog, megbakes. I think a combination of patience and just a teensy bit more experience, has helped me become a calmer baker.
For instance, I made a similar cookie as these for megbakes. The whole post I lamented about how much trouble I had with the cookies.
The dough kept falling apart and I was about to throw the whole batch of dough out the window.
The same can be said about this Leprechaun Cake. This entire cake was meant for the trash since it busted into a million pieces, but I managed to salvage it.
In comparison, these cookies were a breeze. The dough sliced perfectly, the cookies crisped while baking and the frosting melded with the cookies.
Even those these cookies were pretty stress free, don’t worry I’m still pretty emotional about other things and I’m sure I’ll have some more emotional kitchen messes in the near future – like yesterday 😉
OOOOO!!
haha! Thanks Zainab!
I love that you made your own Oreo’s!! Mint and chocolate are one of the best flavor combinations and these look delicious!
I agree! Thanks Linda!
You are speaking my language!

Thank you, Katie! They are pretty darn delicious 😉
How yummy looking!! I LOVE the mint filling, and the fact that they’re cakey, too delicious!! 🙂
Thanks Christina! I was really pleased with how these turned out 🙂
I would seriously take down a whole stack of this!
Oh, me too, Jocelyn! I’d take a few for breakfast 😉
I definitely still have emotional baking sessions…like that time a layer cake I made literally fell into itself and crumpled everywhere. Sigh. It happens! But I’m glad to hear that these were stress free and fabulous!
Ahh, I’ve had layer cake disasters, too, Joanne! At least they haven’t stopped us from stepping into the kitchen 😉
You know I’m in love with these!! Perfection.
Thanks Dorothy!
Mmmm…yes please!! That minty cream filling looks absolutely irresistible, and I bet these knock the socks off the store-bought version! I can’t wait to try them out!! 🙂 Pinned!
Thanks so much, Anna! I really appreciate it!
I get VERY emotional when kitchen disasters arise, Megan! You are not alone. But these are worth being happy about, because they are perfect.
Thanks Mir! It’s nice to know I’m not the only one 😉
I think I was an emotional baker…more specifically a stress relief kind of baker. Seriously, when I needed to write my finals, my kitchen looked like a bakery.
These cookies look amazing!!
eek! I know what you mean, Cathleen! Baking is a great procrastination tool 😉 Thanks so much for visiting!
Mmmm these look delicious with the mint / chocolate combo!
I’ve been known to throw a bit of a hissy fit when things don’t go as planned in the kitchen!! 🙂
Nothing wrong with a hissy fit! It can be so discouraging when things mess up, but so rewarding when they work out!
I would eat soooo many of these! Love that you made your own, so much healthier 🙂
Thanks Medha! I had quite a few myself 😉
yay! they look so tasty!!!
Thanks so much, Kelsey!!!
