Homemade vegan mint oreos with Creme de Menthe frosting

You know, I’m really not as big as an “emotional baker” as I used to be. When I started this blog, I was always freaking out when things didn’t go my way in the kitchen (and otherwise, too.) There’s plenty of evidence of this from my first blog, megbakes. I think a combination of patience and just a teensy bit more experience, has helped me become a calmer baker.

For instance, I made a similar cookie as these for megbakes. The whole post I lamented about how much trouble I had with the cookies.

The dough kept falling apart and I was about to throw the whole batch of dough out the window.

The same can be said about this Leprechaun Cake. This entire cake was meant for the trash since it busted into a million pieces, but I managed to salvage it.

In comparison, these cookies were a breeze. The dough sliced perfectly, the cookies crisped while baking and the frosting melded with the cookies.

Even those these cookies were pretty stress free, don’t worry I’m still pretty emotional about other things and I’m sure I’ll have some more emotional kitchen messes in the near future – like yesterday 😉

    I love that you made your own Oreo’s!! Mint and chocolate are one of the best flavor combinations and these look delicious!

    I definitely still have emotional baking sessions…like that time a layer cake I made literally fell into itself and crumpled everywhere. Sigh. It happens! But I’m glad to hear that these were stress free and fabulous!

    I think I was an emotional baker…more specifically a stress relief kind of baker. Seriously, when I needed to write my finals, my kitchen looked like a bakery.

Perfect. • It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.
•
So I haven’t been taking as many photos.
•
Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.

Here’s to a day of finding bliss in the imperfect and knowing it truly is perfect just as it is.
