A delicious and healthy salad perfect alone or paired with a smoothie

Spinach Cranberry Salad

Are you an eBayer? Are you one of the ones raising the price way up on things I don’t need, but want anyway?

I’m going to use today’s post to rant – just for a second though, we’ll get to this awesome salad soon 😉

When an eBay item starts at $0.99 with no reserve and ends in 7 days, what do you do? Bid right away and jack the price way up? That just doesn’t make sense to me. Am I missing something?

Spinach Cranberry Salad

Anyway – on to things that don’t stress me out – like delicious salads. This salad includes spinach, green pepper, your choice of cheese or tofu, crushed pita chips and dried cranberries. I like to top it with a tahini based dressing like Annie’s.

I must admit I used to hate salad – eating the least amount possible. I found a trick that I still use today – eating all the leafy greens first and saving all the toppings for last. Although, I now like salad, it’s still nice to end a meal with the perfect taste. For this salad, my final bite always includes a pita chip and dried cranberry. I don’t know if this is crazy or not, but, hey, why not?

This salad is completely customizable – use a little less or more of anything, or totally switch out ingredients.

Salads may be a bold item for The Emotional Baker to feature, but I’d thought I’d try my hand at another food genre. Tell me what you think.

Serves: 1
Ingredients
  • 85 g spinach
  • 25 g green pepper
  • 20 g dried cranberries
  • 14 g pita chips
  • 14 g white sharp cheddar cheese or ¼ cup baked tofu
  • 1 tbsp goddess dressing - like Annie's
Instructions
  1. Place spinach in bowl.
  2. Top with all remaining ingredients, except dressing.
  3. Swirl with dressing.

    Oh man, I used to be a big time eBayer when it first came out and people that jacked up the price so early on in the auction drove me nuts! This delicious salad would totally calm me down though! I love spinach salads and the cranberries, green pepper and pita chips sound awesome in here!

    I don’t buy items on ebay because I hate the whole bidding thing too! And I am impatient and hate waiting to see if I won. I would definitely love to have a big bowl of this salad for dinner tonight!

    I haven’t been on Ebay in the longest time, but I sure know what you’re talking about! This salad looks delicious, Megan! Spinach leaves are my go-to lettuce for salads, and I love the addition of cranberries! Sounds perfect!

Perfect. • It’s something we try so hard to ac Perfect.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.

Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
