My Christmas gifts seem to have a theme. It seems every year I’m replacing something I broke. So, I’m sure it’s no surprise what some of my recipients will be receiving. It’s not that I’m really klutzy, it’s just things break under my watch.

I’m lucky I don’t bake with a KitchenAid mixer regularly. Did you watch this season’s The Great British Baking Show? One of the contestants, Ruby, broke the glass bowl of a mixer. I’m sure that would happen to me. & if it did, I’d be borrowing my mom’s. So, we all know what she’d be getting for Christmas. But if that did happen in the near future, I could enter this awesome giveaway for The Sweetest Season Cookie Exchange (more info below!)

Stollen Cookies

I was so thrilled when Erin reached out to me about participating. I honestly wasn’t really planning on creating Christmas cookies for TEB, but then a wave of inspiration hit me and these Stollen Cookies were born. Maybe you’re thinking dates and golden raisins and other dried fruits wouldn’t make for an amazing cookie, but believe me when I say these are delicious. I typically wouldn’t pick a fruit cookie, but I seriously loved these and have been dreaming about them ever since. You don’t even think that you’re eating fruit they are that good. If you follow me on Instagram, you know they are an ode to my family’s Christmas Eve tradition.

Ingredients

  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup canola oil
  • 1 tsp vanilla
  • 1/3 cup orange juice
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup slivered almonds, reserve some for topping if desired
  • 1/2 cup fruitcake fruit blend - golden raisins, dried pineapple, currants, cranberries, dates, etc.
  • Zest of 1 large or 2 small oranges
  • Glaze:
  • White chocolate
  • - or -
  • 1/2 cup powdered sugar
  • 1 tbsp cashew milk

Instructions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In large bowl, combine sugar, brown sugar, canola oil and vanilla extract. Stir in orange juice.
  3. In medium bowl, combine flour, baking soda, baking powder, and salt. Mix into liquids. Once dough forms, fold in almonds, fruit mix and orange zest.
  4. Divide dough into 24 equal balls. Roll into balls, flatten with palm of hand.
  5. Bake for 10 minutes. Let cool 5 minutes. Transfer to wire racks.
  6. If using white chocolate, melt at 50 percent power, in 30 second increments, stirring in between. Spoon onto cookies and top with almonds, fruit. Allow to set.
  7. If using glaze, combine powdered sugar and milk. Drizzle on cookies, sprinkle with almonds, fruit. Allow to set.

    I just got done with the first season of The Great British Baking Show – and I LOVED it – cannot wait to start the 2nd season – and woa – poor Ruby! Now that’s what I’m scared of doing! But – these cookies could calm my nerves! I love stollen – but never have I had stollen cookies – these sound fabulous!

Perfect. • It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.
•
But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.
•
So I haven’t been taking as many photos.
•
Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
