Move over traditional butter and egg filled pound cake – there’s a new vegan cake in town – Sweet Potato – with a classic drizzle

So, last week, I talked about something I’m scared of. Well, this week, let’s talk about something I love!

You know the infamous question, “What’s your favorite food?” I always say sweet potato! I can’t guarantee this is 100 percent true, but those awesome ‘taters are definitely in the Top 5!

Oh my goodness! The possibilities are endless. Sweet potato casserole, muffins, stuffed sweet potatoes, pie, biscuits & have you ever had Sweet Potato Sushi?!?! Seriously, the best thing ever!

I can’t believe I never thought of making a cake though. On an episode of Great American Food Finds, one of the store’s specialties was Sweet Potato Pound Cake. I knew right away I had to make my own! This was so moist and full of my favorite flavor.

Sweet Potato Pound Cake

Ingredients

  • 3 cups all purpose flour
  • 2 cups sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 cups mashed sweet potato
  • 3/4 cup cashew milk
  • 3/4 cup canola oil
  • Glaze:
  • 3/4 cup powdered sugar
  • 2 tbsp cashew milk

Instructions

  1. Preheat oven to 350 degrees. Grease two loaf pans.
  2. In large bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. In a medium bowl, combine mashed sweet potatoes, cashew milk and canola oil. Pour wet into dry and milk until combined.
  3. Pour/divide into prepared pan. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
  4. Allow cake to cool for 15 minutes. Then invert.
  5. Prepare glaze: Whisk together powdered sugar and cashew milk. Once combined, drizzle over loaves.

    I have a few extra sweet potatoes that I need to use and this pound cake looks perfect. The cashew milk and sweet potato must give it a great texture. I love the addition of the glaze too!

    Oh wow, this is interesting! The glaze is literally the icing on top and drew me into this. Thanks for the recipe – will most likely be trying this for Thanksgiving. 🙂

    Besides making sweet potato casserole and fries, I haven’t cooked much with sweet potatoes. And that’s weird because I love them! I need to branch out. This pound cake looks divine!

    Sweet potatoes are definitely in my top 5 favorite food list too. I’ve never tried using them in baked desserts though – love this idea!

Perfect. • It’s something we try so hard to ac Perfect.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.

So I haven’t been taking as many photos.

Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.

Here’s to a day of finding bliss in the imperfect and knowing it truly is perfect just as it is.
