A homemade version of a favorite Girl Scouts’ cookie

So, St. Patrick’s Day is just next week and I don’t have anything green to wear. But there’s nothing new there. Every year I’m faced with what I’m going to wear on SPD. & can you believe my high school colors were green and gold?!? (ya, that was circa 2005-2009, but you’d think I’d have some leftover green clothing. Truth is, though, I didn’t own green then & you definitely won’t find any gold in my closet, other than a golden retriever 😉 )

I eventually had to get a green polo – for school spirit ya know? But, I think I’ve donated it since then.

Well, I’m not too worried about getting pinched any way, cause I’ll just bribe people with these thin mints. Yea, they may not be totally green either, but they totally fit in with the traditional SPD flavor theme – and – they’re totally delicious.

Do you promise not to pinch me in return for a vegan thin mint?

Serves: 40
Ingredients
  • ½ cup canola oil
  • ½ cup brown sugar
  • 1 cup sugar
  • 1 tsp mint extract
  • ⅓ cup almond milk
  • ⅓ cup canola oil
  • 2 cups all purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup chocolate chips
Instructions
  1. Combine oil, brown sugar, sugar and mint extract in large bowl.
  2. Add almond milk and canola oil to sugar mixture.
  3. In measuring cup, combine flour, cocoa powder, baking soda, baking powder and salt. Stir into liquid mixture.
  4. Split dough in two. Roll into logs about 12 inches in length. Wrap in plastic wrap and chill in refrigerator for 1 hour.
  5. Preheat oven to 350 degrees.
  6. Line baking sheet with parchment paper or Silpat.
  7. Cut cookies into ¼ inch slices. Place on baking sheet.
  8. Bake 10 minutes. Allow to cool for 5 minutes. Then transfer to wire racks.
  9. Melt chocolate chips in microwave on 50 percent power. Dip cooled cookies in chocolate. Shake off excess chocolate and place on parchment lined baking sheets.
  10. Allow chocolate to set either in refrigerator or at room temperature.

    One of my favorite colors to wear is green and every year I go through my closet and realize I have nothing to wear, lol, so I feel you! LOVE these so much Thin Mints are the best.

    Come to think of it, I don’t have anything green either. I love that you made homemade thin mints. I’ll just carry one of them in my hand all day with the little green sprinkles on top. Does that count as wearing green?

    I don’t buy a lot of prepackaged cookies so I love that these are homemade! Mint and chocolate is the best combination and I would love a few of these right now!

    Megan, haha. . yeah I don’t have any green and gold at all in my closet. . and yeah I risk getting pinched every St Patty’s Day. . I never wear green. . I like to live dangerously 😛 and hello!! LOVE these thin mints!!! love that they are vegan!!! I must try these!!

Perfect. • It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.
•
So I haven’t been taking as many photos.
•
Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.
•
But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.

Here’s to a day of finding bliss in the imperfect and knowing it truly is perfect just as it is.
