I’m the girl that burns a whole bag of coconut.

Catches a fork on fire in the microwave.

Drops a glass jar of cinnamon on a Bodum French Press.

I’m your typical klutz.

But that hasn’t stopped me from carrying on in the kitchen.

Today I’m sharing these cookies that were doomed for failure. I mean, Hello!, they have toasted coconut and they involve melting chocolate! Well, somehow I managed to pull it off. You may have seen them on Instagram (go ahead, take a peek 😉 ) and read about my concerns. Yea, the dough looked funny, but it’s just because these are drop cookies!

Oh, and by the way, they’re the vegan cousin to the Samoa cookie 🙂

Coconut Cookies

Toasted Coconut Cookies

Serves: 24
Ingredients
  • ½ cup canola oil
  • ½ cup brown sugar
  • 1 cup sugar
  • 1 tsp vanilla
  • ⅔ cup light coconut milk
  • 2.5 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup shredded coconut, plus more for topping
  • 1 cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Spread coconut (~1.5 cups) on baking sheet. Place in oven for five minutes. Stir. Place back in for three minutes. Stir. Continue until coconut is toasted a light brown. Be careful not to burn.
  3. Line baking sheet with parchment paper or Silpat.
  4. Combine oil, brown sugar, sugar and vanilla in large bowl.
  5. Add light coconut milk to sugar mixture.
  6. In measuring cup, combine flour, baking soda, baking powder and salt. Stir into liquid mixture.
  7. Fold in shredded coconut.
  8. Drop balls of dough with cookie scoop. Use greased measuring cup to flatten cookies.
  9. Bake 8-10 minutes, until edges of cookies are light brown. Allow to cool for 5 minutes. Then transfer to wire racks.
  10. Melt chocolate chips in microwave on 50 percent power. Drizzle cookies with chocolate. Sprinkle with extra toasted coconut.

    Fork on fire in the microwave? That is scary! But I am sure glad that it didn’t prevent you from making these cookies. I can’t get enough of coconut and would love a few cookies for a special treat!

      It was so silly, Ashley! I was melting chocolate and stirred it and then left the fork in and put it back in the microwave. It was only on “fire” for like a second. I could take a few of these now, too!

    Ugh, I can’t even count the amount of times I’ve burned coconut! One minute it’s underdone and the next it’s burnt to a crisp. But these cookies are totally worth trying my hand at toasted coconut again! So good.

Perfect. • It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.

But at times it can leave us feeling tired, unworthy, and not “as good” as our peers.
•
Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.
•
So I haven’t been taking as many photos.
•
Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.
•
But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.

Here’s to a day of finding bliss in the imperfect and knowing it truly is perfect just as it is.
