Beat the winter blues with cookies made with pineapple juice and dried pineapple

30 minute dishes are deceptive.

When I first started cooking, I spent forever prepping veggies and hunting down spices. It took me a good hour plus before the meal ever made it to the table – leaving my dinner guests tapping their toes.

Well, I’ve been doing better these days, but I’m still consistently late.

The mad dash to get dinner ready on time has helped me with my baking, too. I used to get ingredients out one-by-one, but now I get everything out before I get started.

Now on to these cookies. They were created thanks to Ashley from Cook Nourish Bliss πŸ˜‰ I made her Winter Vegetable Teriyaki Stir-Fry a few weeks ago and had a LOT of leftover pineapple juice. I wasn’t sure how to use it. At first, I was thinking of a loaf cake like my mom used to make (still working on that idea,) but then it came to me – cookies! I also made a pretty awesome smoothie πŸ™‚

These cookies will definitely help you make it to spring!

Tropical Pineapple Cookies

Ingredients

    Cookies:
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup canola oil
  • 1 tsp vanilla extract
  • 1/3 cup pineapple juice
  • 1/2 cup dried pineapple, diced
  • 1/2 cup white chocolate chips
  • Icing:
  • 1 cup powdered sugar
  • 1 tbsp boiling water

Instructions

    Cookies:
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In measuring cup or medium bowl, combine flour, baking soda, baking powder and salt. Set aside.
  3. In a large bowl, use a fork to combine sugar, brown sugar, canola oil and vanilla extract. Add pineapple juice.
  4. Add dry ingredients to liquid and mix well. Fold in dried pineapple and white chocolate chips.
  5. Divide dough into 24 equal balls. Roll into balls, flatten with palm of hand.
  6. Bake for 8 minutes. Leave on baking sheet 5 minutes. Then transfer to wire racks to complete cooling.
  7. Icing:
  8. Whisk powdered sugar and boiling water. Spoon over cookies and sprinkle with diced pineapple, if desired. Allow to set.

    You are SO right, Megan. Once you prep all those veggies it’s an hour, not 30 minutes. And I hate standing there chopping! My best tip is to designate a sous chef. But I don’t know where to find one. πŸ™‚
    These are a dream come true! I love how cheerful these are in this coldness!

    My number one tip for dinner prep is mise en place. I always pre chop, measure, and lay out my ingredients in the order I’ll need them. Makes for a lot easier and less stressful cooking! I am so obsessed with these pineapple cookies! It is so cold here and these cookies are keeping me looking forward to summer!

    These look really great, Megan. Love the tropical flavors – I’m a big pineapple fan. As for dinner prep – or any recipe prep – definitely measure and chop everything before hand – it makes preparing the meal/recipe sooo much smoother!

    Pineapple is my favorite fruit. I’d love these! As for dinner prep, I find that having a quick, tiny snack, cranking my tunes, and sometimes having a glass of wine makes the process less painful. Cooking when hangry is never fun. πŸ™‚

    Well these cookies sound absolutely amazing! Pineapple in cookies must happen in my kitchen soon. Definitely.

    I have no advice for dinner prep. In our house, we make everything at the beginning of the week and reheat as needed when we want to eat. It’s how we’ve always been and how we will likely continue to be! Especially with a baby on the way! But I have found that getting all my ingredients out before I start is definitely a step in the right direction. When I’m developing a recipe, I often am not sure whether or not I put an ingredient in or not, haha. So I started moving ingredients that I already put it to another stop. Super helpful and saves a lot of time!

Perfect. β€’ It’s something we try so hard to ac Perfect.

It’s something we try so hard to achieve.

But at times it can leave us feeling tired, unworthy, and not β€œas good” as our peers.

Trying to get the perfect photo, something I use to love to do, started to drain me out more than fill me up.
β€’
So I haven’t been taking as many photos.
β€’
Getting the perfect photo would lead to my family eating cold pancakes while I tried to get that award winning shot. Or an hour of clean up picking up all the leftover sprinkles I used for my fancy backdrop.

So this Easter I kept things easy. I shot a few quick photos of these Sourdough Cinnamon Rolls with my iPhone and left my DSLR and natural light to the side.

The Emotional Baker of a year ago would gasp that I’m posting this photo.

But here’s the truth: Every day’s perfect, even if it goes unplanned. Every meal, every moment with loved ones, every walk, everything you do each and everyday is perfect. And just as it’s intended to be.
